Jane's Recipes

Here are some recipes for main meals that are a little lighter - perfect for warmer weather and transition seasons.

Bowl of chicken, cauliflower, greens, and cashews over rice.

Curry Chicken With Kale And Roasted Cauliflower

The aromas from this curry will fill your house and brighten a winter day. Pan-roasting the cauliflower separately and adding to the pan just before serving is the key.

Pasta with pesto, asparagus, and bacon on a white plate.

Farfalle with Meyer lemon-arugula pesto and spring asparagus

Nothing says spring quite like asparagus. We are lucky to have a local farm 15 minutes from the winery with asparagus that has been cut that morning. The pesto in this pasta can be tossed with other vegetables as well, making it very versatile and a nice change from basil pesto. This recipe is for 2, but can easily be doubled.

Wine glass and plate of food on a stone ledge, with mountain vista in background.

White Bean and Tuna Salad

I served this salad at our Behind the Cellar Door event last March and everyone wanted the recipe. You can cook the white beans yourself or use good quality can beans, rinsed well and drained. This salad is great for a picnic or lunch on the patio with a cold glass of rosé.
