Curry Chicken With Kale And Roasted Cauliflower
The aromas from this curry will fill your house and brighten a winter day. Pan-roasting the cauliflower separately and adding to the pan just before serving is the key.
Moroccan Spiced Beef Short Ribs
The spices on these short ribs are what set it apart from other blander versions. Great on a cold night with a glass of syrah, this meaty dish will please family and friends. For best results, pre season the meat the night before cooking. Oven-roasting makes the meat very tender. I have also made this with boneless chuck instead of short ribs, which is equally as good. Cut the beef into pieces about 2" x 3". Check the meat after about 2 hours for tenderness.
Red Kuri Squash with Dukkah
Winter squashes are so great for oven-roasting and many of them do not need to be peeled first. Red Kuri is one of my favorites, similar to an acorn squash. Dukkah is a blend of toasted spices and nuts that I use on many things and is great to have around. - as a salad sprinkle, on scrambled eggs, with yogurt for a dip.
Tee Easton's Carrot Cake
Tee was Bill's Mom, who always made this cake for Easter. I am sure Tee found this recipe in the 50's or 60's, but she always put her touch on it by packing it with lots of grated carrots. So get out your grater and get to work! The original recipe called for cream cheese frosting, but we prefer it with vanilla ice cream. If you have too much - share with your neighbors!
