Cheesy Herb Muffins
These easy, cheesy muffins are like a biscuit, but baked in a muffin tin. They are great with soup, stews and breakfast eggs.

Here is a simple and satisfying stay-at-home meal that can be a thick stew served as a side dish or as a soup all on its own, depending on the amount of liquid you add. Roasting the vegetables and adding them at the end keep them from over cooking. Even better, you can substitute with things you have on hand - just look at my suggestions.
Tagine of Chicken with fennel, citrus and olives
This is a perfect dish for transition from winter to spring and can easily be made a day ahead and reheated. The smell of the spices, citrus and olives while the tagine is cooking will immediately transport you to the Mediterranean, even if we can't go there. Try oranges and black olives or lemons and green olives - they all work well.
Tee Easton's Carrot Cake
I always make this carrot cake in April. One, because April is Bill's Mom's birthday month and two, because the family always has it for Easter gatherings. I am sure Tee found this recipe in the 50's or 60's, but she always put her touch on it by packing it with lots of grated carrots. So get out your grater and get to work!
