Ingredients
2 tsps ground ancho chile
1 tsp sweet paprika
1 tsp cumin
1 tsp coriander
1 tsp fenugreek
1 tsp granulated onion
1 tsp granulated garlic
1/4 tsp cinnamon
1/4 tsp ginger
Directions
Mix all the ingredients in a bowl and store in an airtight jar. Recipe makes about 3 Tbl.
Make a dip for veggies!
1 Tbl. berbere spice mix
1 cup plain Greek yogurt or labne
1 Tbl. minced cilantro
Mix together and let stand in refrigerator for 1 hour.
Serve with cucumbers, celery, carrot, jicama, radish - all things crunchy.
Use as a rub for grilled chicken thighs or pork tenderloin.
Mix 1 Tbl. berbere spice mix with 1 Tbl. olive oil to make a paste.
Rub all over the meat with some salt until well coated. Double the recipe if needed.
Let marinate 1 hour before grilling.
The leftovers make great sandwiches!
