Mom's Sugar Cookies

This recipe has been in the family all my life. When we were young we made lots of shapes and decorated them. My mom settled into stars with a dusting of sugar. I sometimes add trees as well. They are irresistible.
Ingredients
  • 4 cups unbleached flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup butter (2 sticks)
  • 3 eggs
  • 1 1/2 cups sugar
  • 1 tsp vanilla
Directions
Mix the flour, soda and salt. Cut the butter into slices and cut into the flour, either with a pastry blender or with your mixer. You should have fine crumbs when you are done.
 
Separate the eggs into two small bowls
Beat the egg yolks with the sugar and vanilla until well mixed.
Beat the egg whites until soft peaks form.
 
Mix the egg yolk/sugar mixture into the flour mixture until well blended.
Fold the egg whites in until mixed and dough comes together.
 
Divide the dough into 2 or 3 balls. Flatten each ball into a round about 1/2" thick. Wrap each in plastic wrap.
Refrigerate dough for at least an hour, or leave overnight.
 
When ready to bake cookies, roll out dough on floured board to about 1/4" thick. Cut into shapes with floured cutters.
Bake at 375° for about 10 minutes.
Remove from oven to cooling rack and sprinkle with sugar while still warm.
 
Makes about 80, 3" stars.
